These invoices testify to the improvisation of the organizer, who had to buy "in bulk" from grocers, pastry chefs and wholesalers, jam, coffee, cookies, sugar, bread, etc. Sometimes in Pont-Chateau (stamped with a fiscal stamp), Barcelonnette, Montpellier, Carcassonne (4 crates of bananas) or Digne (with a rare stamp from the organization). It's a miracle that these documents, in average condition, have survived the passage of time to bear witness to the history and strength of the Tour de France.
