CHAPTAL: The Art of making wine. Paris, Deterville, 1807. In-8 modern burgundy half-marquin, back with nerves, golden head, untrimmed (fake-title repaired). A folding board. Second edition of this great treatise on oenology which deals with fermentation, climate, soils, atmosphere, diseases, etc. It is illustrated with an engraved folding plate bound in-fine presenting an alembic and its stove. Chaptal had developed his doctrine on winemaking as early as 1799 when he wrote the article "wine" in the Dictionary of Agriculture by Abbé Rozier. Immediately, vineyard owners took over his work and scholars such as Cadet de Vaux and Roard published this doctrine with new observations. Armed with all the information provided to him by those who adopted his principles, Chaptal developed his subject in this treatise which revolutionised the art of winemaking and was reprinted several times (G. Oberlé). A fine copy, washed and glued.
