Louis Liger (1658 - 1717) was an agronomist from Auxerre and wrote numerous works on agriculture and domestic economy. The first edition of this work dates from 1710. "Nearly a thousand recipes for the use of the tables of the lords and burghers are divided into three "books": the first concerns bread, pastries, pâtés, wine, beverages and liquors. The second one deals with the service: sugar, jams, fruit preserves, dairy products; it is especially intended for ladies. The third is devoted to cooking. It is followed by explanations of specific terms as well as instructions for fat and lean meals. The recipes are accompanied by practical remarks and perfect health advice" Livre en Bouche - 192.
