Bras is the creator of a cuisine of ever-changing emotions. It is enough to see his recipes, even before tasting: landscapes, architectures, harmonies. The chef tells his story in each of his dishes, encouraging discovery and simplicity. It's a cheerful, inventive cuisine, all in combinations like his life, a cuisine that "is more love than science". It is also a whole universe whose center is wonder. There is a couple, Ginette and Michel, in a very strong relationship, who made the "bet to choose the sky, the high nature". A second couple, Sébastien, the son, naturally a cook, and Véronique, the hostess, as well as a great team live this adventure. The Puech du Suquet, their home with its audacious architecture, is located on the Aubrac plateau, in the heart of a land in which it is reflected. The local products have their place at the table, the cutlery counts with the laguiole blades, the dining room extends directly on the plateau... which they call "our house". And if "Aubrac is a dream", if it is "its nature to go beyond the limits", it is above all a nourishing and fertile land, a "small immensity" of silence and life. It has inspired Michel to take some of his best photographs in search of the essential, and when they bear witness to man's travels, they are respectful of beings and things.
