One of the best editions, if not the best, of this great classic of culinary literature. A superb iconography "19th century". A beautiful presentation, in introduction, of the history of French cuisine as well as "notes" of Jean Arnaboldi, great specialist of French regional cuisines as well as many seasonal menus of the chef Dugléré of the "Café Anglais" in Paris.
