Paris, ed. by the author and Au Bureau de la Collection Culinaire d'Antonin Carême on label pasted on top, 1854, 2 vol. in-8, black half-chagrin, dark brown and yellow marbled paper boards, 4 boxes with central fleurons and in the corners, author, title and tomaison gilded on spine with 5 nerves, period binding, vol. 1 : (4) - 50 - 111 - (1 bl.) - 224 pp. and 2 pl. hors texte de dessins gravés sur acier, volume 2 : III - (1 bl.) - 40 - 11 - (1 bl.) - 19 - (1bl.) - 202 - (1 bl.) - 220 - 2 pp, 5 plates of steel-engraved drawings (7 plates in all), "explanation of the term of treatise of the office", tables of contents, "general reflections", alphabetical tables and Errata in the second volume, large signature of the author on the verso of the title page, scattered freckles on the paper and on some plates, especially at the end of the volumes. This is one of the most complete treatises on cooking of the 19th century with large sections devoted to pastry, ice cream, sweets, hors d'oeuvres, salads, cheeses, compotes of different fruits, but also on the refining of sugar, petit fours, cookies, ice cream, macaroon, marzipan, soufflés, caramel. Well completed with all the "supplements".All parts of the book have a specific pagination. "Confusion" on the part of the binder who reversed the pages between 112 and 129 in the chapter of "Petits fours"! The foreword explains the nature of this treatise "d'office" as well as on the prerogatives of the officer in the former grande cuisine, the importance of the know-how for the decoration and sandblasting, the setting of the tables, the flowers. He evokes the suppers of Princess Bagration, at whose house the Emperor Alexander, Lord Castlecreagh, the Emperor of Austria, Metternich and Talleyrand frequented. This treatise was published in 1845 and 1846 in the form of "fascicles". Our copy would be a third edition after the original of 1845 and before that of 1854. Gérard Oberlé says that he has seen an edition of 1851! hence my hesitation! Very nice presentation in a very nice binding of this RARE and Sought-after work. Very good condition of the bindings and the paper despite the freckles.
