Paris, Librairie Hachette, 1881, fifth edition, large in-4, dark brown half-chagrin, author - title and gilt fillets on spine, dark brown and yellow marbled paper boards, period binding, XI - (1) - 861 - (3) pp, complete with 25 plates: 1 black frontispiece, 4 plates printed in chromolithography, 20 black plates out of the text and 182 woodcuts drawn after nature by E. RONJAT, preface by the author dated July 15, 1867, "drawings of the work", menus, folding of the napkins, table of contents, table of woodcuts, table of plates and drawings. This culinary work is "one of the most complete and serious that exists" (Vicaire 418). The book is divided into two parts: household cooking and gastronomic cooking. Many menus for 8 to 600 people! Very good chapter on napkin folding. This book is the witness of a sumptuous era which marks an important turning point in the evolution of the culinary art. A must-have. Good condition of the binding; scratches and small lacks at the edges of the boards; small tear, without lack at the pre-title page; no foxing but with some small scattered soiling due to its use in the kitchen.
