Paris, chez l'auteur, 48 rue Vivienne, 1909, ORIGINAL EDITION, limited edition, in-12, burgundy half-wrapped cardboard, light burgundy paper boards with black fillets and text, smooth spine without text, rounded corners, cover of the publication period, VIII - 274 - (2) pp, strong paper, illus. of 16 black photographic plates out of the text, "art nouveau" headbands, foreword, cold menus, favorite wines, American cocktails, dictionary of technical terms in food laboratories for ice-cream makers, confectioners, cooks and pastry chefs, table of contents, Errata. The author, about whom not much is known, was an ice cream maker, Chevalier du Mérite Agricole, member of the jury at culinary exhibitions, honorary diploma, grand prize, out of competition, holder of foreign Orders. Curious mixtures of ice cream recipes, alcoholic or non-alcoholic aperitifs, but also "fortifying" aperitifs, iced soups, egg preparations, sauces, sweet entremets, cakes, meat terrines, cold truffle and foie gras chowders, cold fish, but also recipes based on fruit, cookies, mousses and especially ice cream with all the "sauces"! Very beautiful photographs in black of frozen dishes This book is very little known even of the great culinary bibliographies and is especially of an EXTREME RARETEE and very RESEARCH! Attention: the page 191/192 which deals with the "rules of courtesy at the table" is missing on the back and a blank side on the front. Very good condition of the paper uniformly yellowed, a very small lack of paper at the top corner of the title page and 1 booklet slightly uncropped in part; the cover is faded with folds on the back. Still a very good copy.
