Rare first edition printed in Nîmes: an anthology of southern cuisine in 885 recipes, which, unlike that of northern France, "was still waiting for a book", according to the author. Nicknamed the "Lent of Provençal cuisine", Charles Durand introduced Parisians to his brandade de morue sold in jars (without garlic), just as the famous Durand pasta was shipped to Constantinople. 885 recipes numbered and precisely explained, including the sauces that bear his name. The book concludes with a table of preparations, suggested menus for eight to thirty-six covers and a culinary glossary. Vicaire, col. 231-232 ("uncommon edition"); Oberlé, 204 (later edition).
Author's signature on verso of faux-tittre, authenticating the copy. The errata leaf at the end of the volume is complete. Contemporary binding: in-8 half vellum (worn, browned).
